Ingredients

– 2 Tablespoons pesto***
– 1/2 avocado, smooshed
– 1 sexy looking kale leaf
– handful cherry tomatoes, halved
– 1 fried egg (extra credit if the yolk is all runny and nommy)
– 2 Hilary’s Spicy Veggie Sausages
– for topping: chopped basil + sprinkle of hemp seeds

Preparation

Prepare pesto (see recipe below). If it’s already prepared, the prep time will be shaved to almost nothing!

Sammy How-to:

Prepare Hilary’s Veggie Sausage according to package directions, approximately 4 minutes per side in hot skillet. Set aside. Use the same pan and fry up your egg (if using). Cook it to your liking. Either before, during, or just after, mix together your pesto and avocado. Layer accordingly, like food jenga, and sprinkle with basil & hemp seeds for the most glorious feast! Enjoy!

*Pesto Recipe:

2 C Fresh Basil Leaves (can add spinach for saving $)

1/2 C Raw Parmesan or Nutritional Yeast (for vegan option)

1/2 C Olive Oil

1/3 C Pine Nuts

2 Garlic cloves, chopped

Salt + Pepper to taste

Add Pesto ingredients to your blender and blend, baby, blend!
