Let me just begin by saying, HELL YES.  I was originally given this recipe by Tara, a lovely client who got it from The Conscious Cleanse book, and I’ve re-vamped it a tad. This recipe is so easy and life changing.  If you are like me and steer clear of chickpeas (aka: you don’t like the feeling of baby aliens in your stomach) or are paleo, this recipe will revive your hummus-love.

Beautimous Beet Hummus

vegan, paleo, grain-free, gluten-free, legume-free

Directions: Blend everything in your Cuisinart or Vitamix.  Spread over crackers or friends.

Ingredients:

4 pretty beets, chopped and oven roasted

4 T. tahini

1/4 teas. sea salt

1/4 C. Olive oil

1/4 C.  fresh squeezed lemon juice (you can also leave out the lemon juice and add curry for a yummy flavor twist)

1/2 teas. black pepper

1 clove garlic (or more, if you hate vampires), minced + lightly sauteed, or roasted with beets (adds a more savory, less spicy flavor)
